Spinach and Egg Surprise

Ingredients

300g spinach

3 organic eggs

black pepper

butter

Method

1. Wilt the spinach in a heated saucepan.

2. Squeeze excess water out.

3. Place spinach in an oven proof dish.

4. Make into three birds nest shapes and crak an egg into each one.

5. Sprinkle black pepper onto top of egg.

6. Bake in oven (180C) for 15 minutes or until eggs are set.

 

Zucchini Fritters

A great substitute for hash browns.

Ingredients

1 cup grated zucchini

2 organic eggs

1 tablespoon olive oil for cooking

sprinkle of nutmeg

sea salt and pepper to taste

Method

1. Combine all the ingredients into a bowl.

2. Stir well until combined.

3. Heat oil in a large pan over a moderate heat.

4. Mould mixture into medium sized balls and

press flat into pan.

5. When brown on one side, turn and cook the other.
