Roasted Chicken Breast with Avocado,

Mango and Papaya Salsa

Salsa Ingredients

½ mango diced into small cubes
½ papaya seeded and diced into small cubes
½  avocado cut into 1cm chunks
2 teaspoons minced fresh ginger
1 tablespoon lime juice
1teaspoon sesame oil
pinch of salt
pinch of cayenne pepper

Chicken Ingredients
2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
¼ cup finely chopped coriander
½  teaspoon celtic sea salt
pinch of cayenne pepper
2 organic chicken breast halves with skin and bone

Method
1. Mix all salsa ingredients and let sit for at least one hour
in the refrigerator.
2. In a bowl combine olive oil, lime juice, coriander and cayenne.
Coat chicken and marinate for one hour.
3. Turn oven to 180C. Place chiken with marinade on top and bake
for approximately 45-50 minutes. Turn occasionally.
4. Serve chiken and place salsa on top.
