Moroccan Spiced Lamb Served with Quinoa and Wilted Greens
¼ teaspoon ground cumin
¼ teaspoon ground cardamom
¼ teaspoon freshly ground pepper
¼ teaspoon ground ginger
pinch cayeene pepper
¼ teaspoon cinnamon
1½ teaspoons celtic sea salt
2 garlic cloves, minced
4 organic lamb rib chops
2 tablespoons olive oil
1 tablespoon chopped parsley and mint
4 cups steamed kale
2 cups cooked quinoa
1. In a small bowl mix the spices with the salt.
2. Pat the garlic all over the lamb chops, then
sprinkle them with the spice mixture.
3. In a large pan, heat the oilive oil. Add the chops and cook
on moderate heat, turning once, for about 6 minutes
for medium rare.
4, Transfer the chops to plates, garnish with parsley
and mint. Serve quinoa on the side.
